Mustard and Marmalade Glazed Baked Gammon

Ingredients:

1 whole gammon (2 to 3 kg) feeds 8 to 12 people
½ cup orange marmalade
¼ cup wholegrain mustard
20 whole cloves
Splash olive oil

Method:

Preheat oven to 180 C.

Add water (or beer) about 1 cm deep to cover the base of a roasting pan.

Score the skin of the gammon into diamond shapes with a sharp knife and put 1 clove into each diamond.

Place Gammon into the water/beer in the roasting pan.

Cover the whole pan with tinfoil and bake for 1 ½ hours.

Mix marmalade, mustard and a splash of olive oil in a small bowl and microwave on high for at least 3 minutes, or until marmalade has melted and started to thicken.

Remove the gammon from the oven and remove the foil.

Increase oven temperature to 200 C.

Brush the entire surface of the gammon with the marmalade glaze to form a thick, sticky layer.

Return the glazed gammon to the oven, this time uncovered, and bake for a further 30 minutes or until the glaze starts to darken and caramelize.

Remove from oven, loosely cover with foil tent and leave to stand for 30 minutes before serving.
