Creamy Georgie’s Bacon & Tomato Pasta

Georgie’s Tip: For extra depth of flavour, add a teaspoon of tomato paste when you pour in the chopped tomatoes. It makes the sauce richer and more restaurant-worthy with zero extra effort! Try it with: A simple green salad and some crusty bread rolls to mop up that gorgeous sauce. A glass of cold juice for the kids and you’re sorted. 🙌
Ingredients:
1 pack Georgie's Wood Smoked Bacon rashers, cut into small pieces
400g Penne or fusilli pasta
1 tin (400g) Chopped tomatoes
1 Medium onion, finely diced
3 Garlic cloves, crushed
125ml Fresh cream
1 tsp Dried mixed herbs
Salt and pepper to taste
A little oil for frying
Fresh parsley or grated cheese to serve (optional)
Method:

Cook your pasta in a large pot of well-salted boiling water according to the packet instructions. Drain and set aside, keeping a small cup of the pasta water.

While the pasta cooks, heat a drizzle of oil in a large pan over medium-high heat. Add the bacon pieces and fry until nicely golden and starting to crisp up – about 5 minutes. That smoky smell is everything! 🥓

Add the diced onion to the pan and cook alongside the bacon for 3–4 minutes until soft. Add the garlic and fry for another minute.

Pour in the tin of chopped tomatoes and the mixed herbs. Stir well and let it bubble away for about 5 minutes.

Reduce the heat to low and stir in the cream. Season with salt and pepper. If the sauce feels too thick, add a splash of your reserved pasta water to loosen it up.

Add the drained pasta straight into the sauce and toss everything together until every piece is well coated.

Serve immediately with a sprinkle of fresh parsley or a generous handful of grated cheese on top.
