There’s a ton of great flavours happening here
A delicious combination of salty, smoky bacon on the bone, and the sweet, zesty bite of a quality orange marmalade
2 x Georgie’s smoked pork ribs
1 cup soy sauce
1 cup orange marmalade
1 cup orange juice
1 tablespoon minced garlic
1 teaspoon ground ginger
Cut racks into individual ribs
Whisk the other ingredients together in a large bowl. Add the ribs and toss to coat. Transfer the ribs and marinade to two 15 x 10 inch glass baking dishes. Cover and refrigerate overnight. Turn the ribs occasionally.
Put two roasting racks in the oven and preheat to 180ºC. While heating, line two large roasting pans with foil.
The put the warm roasting racks into the pans. Transfer the ribs from the marinade to the roasting racks and then into the heated oven. Roast until golden brown and very tender (about one and a half hours), rotating pans halfway through. Baste frequently with marinade while roasting.
Serve warm or at room temperature with a fresh green salad and home made oven chips
